Menopause cake










This recipe was given to me by several different people at the beginning of the year. I don't know where it originated from or who was the person that came up with the recipe but it is amazing.
Yes it true that it may not be the nicest tasting cake you'll ever eat but one slice of this a day makes a massive difference to all your nasty menopause symptoms. 
Serves: 6 to 8
Preparation time: 20 mins + soaking
Cooking time: 01:00
Cooking method: Bake


INGREDIENTS:
50g buckwheat flour
50g wholewheat flour
100g porridge oats
50g linseeds
25g pumpkin seeds
25g sunflower seeds
25g sesame seeds
25g flaked almonds
100g mixed dried fruit
50g dried cranberries
1 tablespoon malt extract
1/2 teaspoon mixed spice
350-375 ml almond milk
1 level teaspoon baking powder

METHOD:
Mix all the dry ingredients.
Now combine all the ingredients together and mix quickly until it forms a mixture (similar to Christmas cake mix)
Cover the bowl with a damp tea towel and soak for 30 minutes.
Put the mixture into a greased and lined loaf tin and bake for approx 1 hour at 190'C
Allow to cool in the tin and serve sliced with a little butter or spread of your choice.
1 slice per day is a good source of natural phytoestrogens and the cake is also a good source of healthy omega fatty acids.

Variations:
1. Omit the cranberries and spice, and instead add ground ginger and a couple of pieces of chopped stem ginger.
2. Reduce the almond milk by 50 ml and use fresh orange juice (from 1 large or two small oranges) and add the grated orange zest to the mixture.
