The yummiest gooey chocolate chip cookies
Honestly if your a fan of cookies or have a sweet tooth at all, you HAVE to try this recipe.
These cookies are easy to make and sooo yummy.
This recipe makes 10-12 large cookies.
So all you'll need is,
- 350g unsifted plain flour
- 1tsp bicarbonate of soda
- 1 egg
- 1 tsp salt
- 175g soft brown sugar
- 175g caster sugar
- 225g butter (room temperature)
- 1 tsp vanilla extract
- 350g chocolate ( but you can use less or more, white, dark, milk or a mix. You could even add other types of chocolate, rolo's, smarties, its up to you )
Lets get baking,
First thing you'll want to do is to combine the flour, bicarbonate of soda and salt in one of the bowl's.
In the other bowl using a spoon mix the butter, brown sugar, caster sugar and vanilla until creamy. Beat in the egg.
At this point you need to GRADUALLY beat in the flour mixture. Trust me I've made the mistake of adding it all at once it took four times as long to mix and I thought my arm was going to fall off.
Mix until it comes together as a soft dough.
If your using a bar of chocolate break it up into chunks, you could also use a knife on a chopping board and chop the chocolate up if you want finer chunks.
Stir it into the dough.
Split the dough into two halves. Place the halve onto a piece of clingfilm and roll into a sausage shape. (the dough can be a bit sticky so its easier to do this on the clingfilm. I even loosely wrap the dough so I can roll it out through the clingfilm) and wrap completely in the clingfilm. Do the same with both halves.
Now through trial and error I have learnt that the longer you can cool the dough before baking the less they spread in the oven and stay lovely and thick.
So place your cookie dough in the fridge for 2-4 hours or even overnight.
When your ready to bake the cookies simply unwrap the dough and cut the log into slices and lay on a baking tray covered in baking paper.
Bake for 9-11 minutes
Bake on Gas mark 5, 190°C, 375°F
Leave to cool on the baking tray. Don't be tempted to put them back into the oven because they don't look done because they solidify a lot as they cool.
