Super Easy Sausage Casserole


This really is the perfect family meal it's super easy to make, cheap and quick.
Serves 4.

Ingredients
  • One Red onion, diced.
  • Pack of 12 chipolata's or 6 regular sausages
  • 1 (400g) tin chopped tomatoes
  • 1 (415g) tin baked beans
  • 1 small (210g) tin kidney beans
  • 1tsp cumin
  • 1tsp coriander
  • 1-2tsp smoked paprika
 Method
In a large casserole dish fry the sausages in a small amount of olive oil  until they are browned.
Add the diced onion and fry until soft and browned.
Add the spices and stir.
Pour in the chopped tomatoes, beans and kidney beans and stir together.
Add the lid and simmer for 30 minutes sirring occasionally so that it doesn't burn to the bottom of the pan.
Cut a sausage in half to make sure that it's cooked through.
Serve.

You can serve with mashed potato, sliced bread or just on its own.

Can be frozen for up to a month, thawed and re cooked.
