Mincemeat Recipe
It just wouldn't be Christmas without mince pies. My granny had always made them from scratch but like most grannies she would just magically appear with them so I always assumed that it had been a bit of a kerfuffle to make but I realised a few years ago when I decided to make them myself it's actually surprisingly easy (I think kerfuffle may be my new favourite word). This is the recipe she gave me.
INGREDIENTS
- 1 lb Bramley apples
- 1/2 oz Butter
- 8 oz Currents
- 8 oz Soft brown sugar
- Grated rind and juice of one lemon
- 8 oz Raisins
- 8oz Sultanas
- 6 oz Suet
- 1 tsp cinnamon
- 1/2 tsp Grated nutmeg
METHOD
Peel and core the apple and chop finely. Add butter to a pan and melt on a medium heat. Add apple and cook gently to soften. Allow to cool.
Add to a bowl with the rest of ingredients and mix well. Blitz slightly in a processor so that its slightly blended and mushy but not complete mush. (terrible description and horrible choice of words but I hope you get the idea.) Put into jars and leave for 24 hours before using :)
